  As a stay at home mom I am always looking for ways to save money and still find great meals for my family.

  I have 3 children (3 ½ mos, 2 ½ yrs, and 9 ½ yrs.) and they keep life pretty busy.  We have a new baby she's almost 4mos old and I have been trying to come up with dinners that the family will love, but that are also fairly quick to cook and budget friendly. 

 One of my family's favorite meals is Bacon Cheeseburger casserole.  This is one meal they ask for often!  Its a pretty quick and easy one too. Now obviously depending on how big your family is you may need to adjust ingredient amounts.  We are a family of 5, but we also have grandma over for dinner every night.  I firmly believe that dinner should be a family affair, and that we are all at the table together for dinner. My mom lives around the corner so every night when dinner is done my daughter will call and let her know that dinner is ready and she heads over.  

 I like to find dinners that we can set down and eat together, share how our days have been, goals we are working on and just uninterrupted family time with a good meal.  I hope that your family enjoys this meal as much as mine does.

   I can't seem to find the picture I took before everyone got into it... but this is how mine comes out.

    Bacon Cheeseburger Casserole

    1. – 3lbs Ground Meat (I use hamburger or turkey)
    1 large bag tator tots
    1 package bacon (can use regular or turkey)
    2-3 cups cheddar cheese. (I shred half a block)

      1. I cook my bacon in the oven on a cookie rack over a cookie sheet, so that all grease drains off.  Cook on 375-400 until crispy and set aside on paper towels to cool.
      2. Cook tater tots in oven until crispy, while cooking ground meat.
      3. I drain the meat a few times to make sure all grease has been drained off, and season with chopped garlic, pepper, onion powder and Worcestershire. Cook until browned.  (you can add what ever seasoning you like, I don't do spicy because of the kids and husband cant eat cooked onion)
      4. Take a large casserole dish and layer crispy tater tots on the bottom. Next layer the ground meat,     and crumble bacon over the top.  Cover with cheddar cheese and place in oven on 400 until cheese is bubbling and starting to brown.
