Pumpkin Squares

This recipe came from Land  O' lakes recipes. I was really bummed that I  could not find my grandmas recipe so I  looked one up.

This is one of my favorite fall things to make.  I make for home,gatherings and  neighbors it is very good. It does taste better to me completely cooled or even from fridge later.

I prefer it cold.It turns and old pumpkin pie into something so much cooler . It takes some time since you have to bake 3 times but it is a family tradition that  I love. It is simple enough for kids to get in and help too.First up is crust bake it for 15 min then add filling bake for 25 then topping and another 20 min .





1 cup all-purpose flour
1/2 cup uncooked old-fashioned oats
1/2 cup firmly packed brown sugar
1/2 cup LAND O LAKES® Butter, softened

Filling

3/4 cup sugar
1 (15-ounce) can pumpkin
1 (12-ounce) can evaporated milk
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

Topping

1/2 cup firmly packed brown sugar
1/2 cup chopped pecans

Garnish

 Sweetened whipped cream, if desired

Heat oven to 350°F. Combine all crust ingredients in small bowl. Beat at low speed until mixture resembles coarse crumbs. Press onto bottom of ungreased 13x9-inch baking pan. Bake for 15 minutes. 







Meanwhile, combine all filling ingredients in large bowl. Beat at medium speed until smooth; pour over crust. Continue baking 20 minutes. 







Stir together 1/2 cup brown sugar and pecans in small bowl; sprinkle over filling. Continue baking for 15 to 25 minutes or until knife inserted in center comes out clean. Cool completely. Store refrigerated. Garnish with sweetened whipped cream, if desired..
